After you board your coach, sit back and relax as a landscape of peat and heather-covered moors leads you to Scalloway, the former capital of the Shetlands, which offers quite a colorful history. Patrick Stewart, second Earl of Orkney built a castle here in the late 16th century. Known for his cruelty, he was hanged for his misdeeds in 1615.

From Scalloway, you take a short scenic ride through the isles of Tronda & Burra, visiting the pretty fishing village of Hamnavoe.

A trip to Scotland isn't complete without a serving of fish and chips. Served up freshly cooked, piping hot and splashed with vinegar, it's an experience not to be missed. And one of the best places to enjoy, what many call, the national dish of Britain, is Da Haaf, Seafood Restaurant. A friendly setting with beautiful views over Scalloway and the Isle of Trondra. Located within the UHI's Scalloway Campus specializing in sustainable development of the marine sectors.

You'll take a short scenic ride through the fertile Tingwall Valley and pass Tingwall loch, the site of the Ting, or the Norse parliament. Every year an assembly of freemen would convene at the north end of the loch, set up camp and proceed to resolve disputes and make political decisions.

Along the way you'll learn about Shetland's fishing industry and how the fish served comes from the incredibly iron-rich waters around Shetland.

Surrounded by water you'd think that fried fish would have been a favorite among the locals for centuries. But believe it or not Jewish refugees from Portugal and Spain introduced fried fish into Britain in the 17th century. And the humble potato fry was invented by the Belgium's about the same time. No one's sure who put the two together but it's believed that the pairing took place in London in 1863.
