Dublin, a thriving city steeped in tradition is the capital of the Irish Republic. In addition to its splendid public buildings, it is rich in the domestic architecture of the 18th century as well as historic Georgian mansions, lending beauty to the city's wide streets and spacious squares.

Boxty House
Serving up authentic Irish dishes with a modern twist for over 25 years, Boxty House combines a truly Irish experience of food and service. Padraic O'Gallagher (owner and chef) has transformed traditional recipes into contemporary dishes. Guests have the opportunity to watch the chef create Irish boxty, a potato pancake, utilizing home-grown produce and seasonal ingredients.

What you will see along the way:
Your panoramic drive through Dublin City, includes sights of the Old Parliament Building, Trinity College, founded in 1592 by Queen Elizabeth I, and Merrion Square, one of Dublin's Georgian Squares and now the address of the National Gallery and the Irish Parliament. You will also pass St. Stephen's Green, Christ Church Cathedral and St. Patrick's Cathedral.

Dublin Castle
Built by King John of England in 1230 originally as a defense against the Normans, Dublin Castle has served as the seat of the English government as well as the royal mint and a residence for visiting British leaders.

Snack:
Observe the making of Irish boxty, a potato pancake, whose name evolved from the Irish phrase arán bocht tí, meaning "poor-house bread." Then, sample some yourself!
