Erminio Zaccheo, Sous Chef, is inspired by nature's beauty. He was born in the picturesque medieval village of Maccagno, Italy, which lies on the eastern shore of Lago Maggiore along the border with Switzerland. Erminio began his culinary career as an apprentice at world-renowned hotels and resorts where he learned not only the basics but also the importance of details and little touches that make the difference between good and great. As his career progressed he had the pleasure of working in some of the most exclusive environments in the world. But it was a love of the sea that first brought him to Princess Cruises in 1980 working aboard the original Love Boat.

After traveling the world and serving aboard nearly every ship, Erminio's simple advice is, "Beauty surrounds us every day. Take the time to enjoy it and teach others to appreciate it the way you do."
